Located on Principale Street in the heart of Old Aylmer, the 5e Baron microbrewery is a project collectively realized by three unknown beer lovers. The name of the establishment is a tribute to Matthew Whitworth-Aylmer, Fifth Baron of Aylmer and former governor general of North America. A historical figure known for strengthening ties between Anglophones and Francophones, he also gave his name to the former town of Aylmer. The brewery opened its doors in 2020; that same year, it won the RateBeer award for the third best new microbrewery in the world.
